
Mustard Vinaigrette
Ingredients:
- 1 ½ tablespoons dijon mustard
- 2 tablespoons red wine vinegar or lemon juice
- 5 tablespoons extra virgin olive oil
- Salt and pepper to season
Method:
Add mustard, olive oil, vinegar (or lemon juice) to a jar with a screw lid and shake well. Then add salt and pepper and shake again. Taste and add more vinegar or salt as required.
Tahini Dressing
Ingredients:
- ¼ cup hulled tahini (or use unhulled tahini for a nuttier taste
- ¼ cup water
- 1 tablespoon extra virgin olive oil
- 1 tablespoon tamari soy sauce
- 1 tablespoon apple cider vinegar or lemom juice
- 1 teaspoon honey, liquid or melt first
- 1 garlic clove, crushed
Method:
Add all ingredients to the blender and blend until smooth. Add more water if dressing is too thick.
Lime Dressing
Ingredients:
- 4 tablespoons lime juice (approx. 2 limes)
- 3 teaspoons lime zest
- ¼ cup red wine vinegar
- 1 tablespoon tamari soy sauce
- 1 tablespoon honey
- ⅓ cup extra virgin olive oil
- 1 garlic clove, crushed
- ½ teaspoon red pepper flakes
- 1 teaspoon ground cumin
- ½ teaspoon salt
Method:
Combine all ingredients in a jar with a screw lid and shake well. Leave to stand for 1-2 hours in fridge to allow flavours to combine.
Ginger & Sesame Dressing
Ingredients:
- ⅓ cup extra virgin olive oil
- 2 tablespoons toasted sesame oil
- ¼ cup rice vinegar
- 1 garlic clove, crushed
- 2 tablespoons tamari soy sauce
- 1 tablespoon honey
- 2 tablespoons ginger, peeled and grated
- 1 tablespoon sesame seeds, toasted
Method:
Crush sesame seeds with a mortar and pestle. Then add all ingredients to a jar with a screw lid and shake well. Best to leave for at least 30 mins before using to enhance the flavour.
Avocado Dressing
Ingredients:
- 1 ripe medium avocado
- ¾ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- Juice from one lemon
- Salt and pepper to taste
Method:
Add avocado, vinegar, lemon juice, salt and pepper to a blender and mix well, then while its mixing, slowly add the olive oil until smooth.
Mediterranean Dressing
Ingredients:
- 2 tablespoons red wine vinegar
- 2 tablespoons dijon mustard
- ½ cup extra virgin olive oil
- ½ cup feta, crumbled
- 1 tablespoon parsley, finely chopped
- 1 teaspoon dried oregano
- 1-2 cherry tomatoes, diced
- ½ teaspoon salt
- Pepper to taste
Method:
Combine vinegar, mustard, olive oil, oregano, salt and pepper in a jar with a large screw lid and shake well. Then add feta and tomato and shake again.
