
INGREDIENTS
500gm fresh asparagus
1-2 Tbsp butter
1 C diced tomatoes
1 crushed garlic clove
sea salt and pepper to taste
Method
- Heat oven to 218 °C (425°F). Line a baking tray with baking paper
- Cut the ends off asparagus and place them in baking tray. Melt butter and pour over asparagus.
- Mix tomatoes with garlic, salt and pepper, and leave to stand for a few minutes.
- Spread the tomatoes over asparagus.
- Roast until just tender (6-8 minutes).
- Optional - Sprinkle with cheese such as feta
