Herb crust for Roast Lamb

Ingredients:


This will coat a 400gm lamb leg roast
¾ cup fresh breadcrumbs
2 Tbsp chopped fresh rosemary
2 Tbsp chopped chives
2 Tbsp chopped fresh parsley
grated zest of half a lemon
1 garlic clove, crushed
2 Tbsp olive oil
1 Tbsp dijon mustard

Method:


Herb crust: Mix all the ingredients together to make a paste. Season.
Preparing Lamb Leg:
Before applying the herb crust, dry meat with a paper towel and then place in roasting dish / baking tray. Spread the Dijon mustard on the upper surface of the meat. Pat the herb mixture on to form a crust. Allow to stand for 10 minutes before cooking your leg roast.
